La Venenosa Sierra Occidental is made by Don Rubén Peña Fuentes in Mascota, Jalisco, from cultivated Maximiliana agave. Adobe-oven cooking and wild fermentation precede a single distillation in a homemade stainless-steel and copper pot still. This is raicilla, a distinct agave spirit, not tequila.
Tasting notes
Cacao and ripe papaya aromas introduce chocolate, sweet potato and caramelized-agave impressions. Fresh acidity balances the sweetness, with a light texture and a long, rounded finish.
