Third-generation maestro sotolero Gerardo Ruelas cooks the desert spoon in an earthen pit, crushes by hand, ferments with wild yeast and double distills in copper. The release showcases the fruitier, herbal side of traditional sotol.

Gentle smoke and piney herbs lead the aroma. Honey-roasted root vegetables, herbs and a hint of pineapple-like fruit develop on the palate, followed by a peppery, earthy finish.
