Fidencio Clásico Añejo is a special-release mezcal made from 100% estate-grown Espadín capón by fourth-generation maestro Enrique Jiménez in Santiago Matatlán, Oaxaca. The mezcal is pit roasted over volcanic rock and black oak, tahona crushed, wild fermented in pine vats and twice distilled in copper before resting 23 months in Tumblin' Dice oak barrels. The exact UPC on this listing identifies the Añejo release rather than regular Clásico.
