About this bottle
Erstwhile Jabalí Ancestral 2023 explores the distinctive character of Jabalí agave through clay-pot distillation in Oaxaca. The producer released more than one small batch under this edition, so the individual bottle label identifies the maker, lot and exact strength. This listing does not specify one of those micro-batches.
Production and Tasting Approach
Jabalí, or Agave convallis, is fermented naturally in pine vats and distilled using clay pots and agave-stalk vapor tubes. The unaged presentation emphasizes the agave and traditional production rather than oak. Taste slowly to explore its earthy, herbal and mineral character.

Serve neat in a small open tasting glass. Introduce water a few drops at a time rather than masking the spirit with a strongly flavored mixer.
