About this bottle

Derrumbes Oaxaca combines Espadín and Tobalá agaves in an ensemble made by Javier Mateo and his family in Santiago Matatlán. The agaves are pit-roasted with black oak and tahona-milled before wild fermentation, with pulque used to support the process. This expression represents Oaxaca's Central Valleys within Derrumbes' region-focused range.

Tasting notes

A rounded, full-bodied palate brings together roasted agave and delicate fruit. Light smokiness gives way to mineral impressions, creating a balanced finish rather than overwhelming the agave with smoke.

Serving suggestion

Sip slowly from a wide tasting glass. Fresh grapefruit or lime makes a complementary cocktail partner, while restrained sweetening keeps the mineral and fruit character visible.
