Del Maguey Pechuga is a distinctive Espadín mezcal from Santa Catarina Minas, Oaxaca. Its already double-distilled Minero base undergoes a third distillation with fruit and other ingredients while a chicken breast is suspended inside the still. Clay distillation and this traditional pechuga process create a layered balance of agave, fruit and savory character.
